French Onion Chicken with Apricots

Ingredients
1kg chicken pieces
1 onion
45g packet French onion soup
840g can apricots in natural juice
2 cups rice

Method
Peel and slice onion.
Place chicken pieces into a large casserole dish.
Sprinkle evenly with onion rings and soup.
Stir apricots and juice into the dish.
Bake covered at 180C for about an hour or until chicken is tender.
Cook rice to packet instructions.
Serve chicken on a bed of rice.
