Corn and Tomato Pasta Salad

Ingredients
500g packet pasta
1 tin corn kernels
4 chicken breasts
1 large tomato
ΒΌ cup olive oil
3 tablespoons pesto
1 tablespoon chicken stock
Salt
Pepper
1 lettuce
Cheese
Basil

Method
Cut chicken into bite size pieces and boil for 10 minutes.
Drain and then cook pasta to packet instructions.
Place chicken, corn, tomato and cooked pasta in a bowl.
In a screw top jar combine the oil, vinegar, pesto, chicken stock, salt and pepper.
Cover and shake well.
Pour over pasta mixture.
Toss gently to coat.
Cover and chill for 2 hours.
To serve line a plate with lettuce, place salad on top and sprinkle with cheese and basil.
