Cock Robin Pie
Ingredients
2 onions
2 cloves garlic
2 tablespoons oil
500g chicken mince
400g can tomatoes in juice
½ cup tomato relish or tomato chutney
2 cups cooked rice
1 cup grated cheese
1 egg
2 tablespoons chopped parsley
Method
Peel onions and chop finely. Crush, peel and chop garlic.
Heat oil in a saucepan.
Sauté onion and garlic for 5 minutes.
Add chicken mince and cook until lightly browned.
Add tomatoes and juice, breaking up tomatoes with a wooden spoon.
Place chicken mixture in an ovenproof dish.
Mix tomato relish or chutney, rice, cheese, egg and parsley together.
Spread over chicken.
Bake at 180C for 30 minutes.
