Classic Apricot Chicken
Ingredients
2 tablespoons oil
8 chicken thigh fillets
1 leek
2 teaspoons crushed garlic
1/2 cup chicken stock
400g can apricot nectar
1 packet French onion soup
10 dried apricots
2 tablespoons sour cream
Chopped parsley
2 cups rice
Method
Trim and slice leek.
Chop into little pieces the dried apricots.
Mix French onion soup with apricot nectar.
Heat oil in a lidded frying pan.
Brown chicken thigh fillets over a moderately high heat.
Add leeks and crushed garlic and cook a further 1 minute.
Pour over chicken stock and apricot sauce.
Add dried apricots.
Cover and simmer, stirring occasionally for 30-35 minutes, until chicken is tender.
Cook rice to packet instructions.
Stir in sour cream to chicken mixture. Garnish with chopped parsley.
