Chinese Chicken, Rice and Peanuts

Ingredients
2 cups rice
2 spring onions
1 tablespoon peanut oil
500g chicken tenderloins
8 mushrooms
2 tablespoons chopped parsley
¼ cup roasted peanuts
1 teaspoon prepared minced ginger
¼ cup crunchy peanut butter
2 tablespoons soy sauce
1 tablespoon sesame oil
2 tablespoons lemon juice

Method
Cook rice to packet directions.
Drain.
Trim spring onions and slice finely.
Heat oil in a wok of heavy frying pan and stir fry chicken and spring onions until the chicken is cooked.
Slice mushrooms and add to pan.
Stir-fry for 1 minute.
Mix ginger, peanut butter, soy sauce, sesame oil and lemon juice together.
Add with rice and toss dressing through.
Stir-fry until rice is hot.
Garnish with parsley and peanuts
