Chicken with Mango and Beans
Ingredients
1 tablespoon oil
6 shallots
200g beans
4 chicken thighs
1 tin mango pieces
1/2 cup thick teriyaki sauce
1/4 cup orange juice
2 cups rice
Method
Cook rice to packet instructions.
Slice shallots and chicken.
Top and tail beans.
Heat oil in wok.
Stir fry chicken until cooked.
Transfer to plate.
Stir fry shallots and garlic for 1 minute.
Add beans.
Stir fry for 2 minutes.
Toss through chicken, mango, teriyaki sauce and juice.
Stir fry for 3 minutes.
Serve immediately on a bed of rice
