Chicken, Pesto and tomato pasta
Ingredients
2 tablespoons olive oil
3 chicken breasts
500g pasta
500g cherry tomatoes
Jar of basil pesto
Equal amount of cream to basil pesto
Cheese
Method
Heat oil in a large non stick frying pan over medium high heat.
Season chicken with salt and pepper.
Add to frying pan.
Cook for 5 minutes each side.
Transfer to a plate, cover with foil to keep warm.
Cook pasta according to packet instructions.
Halve cherry tomatoes.
Add to frying pan and cook tossing for 3 minutes.
Thinly slice chicken.
Combine cream and pesto in a saucepan and heat gently.
Serve pasta topped with tomatoes and chicken and then finish off with the required amount of sauce.
