Chicken Country Casserole
Ingredients
1 tablespoon olive oil
3 tablespoons butter
1kg chicken thighs
¼ cup plain flour
1 leek
1 teaspoon crushed garlic
3 tomatoes
2 carrots
1 small sweet potato
1 stalk celery
1 potato
1 cup chicken stock
1 cup white wine
Salt
Pepper
Method
Peel carrots, potato and sweet potato.
Slice leek, carrots, and celery.
Chop tomatoes, sweet potato, and potato.
Cook sweet potato and potato in the microwave for about 10 minutes on high.
Dust chicken in flour shaking off excess.
Heat oil and butter together in a large frying pan.
Brown chicken well.
Remove chicken.
Add leek and garlic.
Sauté for 2 minutes.
Stir in remaining vegetables and stock.
Blend in remaining ingredients.
Return chicken to pan.
Simmer covered for half an hour.
