Chicken Chow Mein
Ingredients
500g Chicken thighs
6 cups chicken stock
1/4 cup rice
2 onions
3 sticks celery
2 carrots
1 cup green beans
1 cup broccoli
1 cup cauliflower
2 teaspoons curry powder
2 teaspoons grated ginger
1 teaspoon Chinese five spice
450g packet Singapore noodles
Method
Cut chicken into bite size pieces.
Boil till cooked.
Drain and allow to cool.
Peel and finely chop onion and carrots.
Slice celery.
Top and tail beans.
Break broccoli and cauliflower into florets.
Place stock into a large saucepan.
Bring to the boil over high heat.
Add rice, vegetables, curry powder, five spice, and ginger to stock.
Reduce heat to low.
Simmer for 20 minutes.
Cook noodles according to packet instructions. Drain.
Add chicken and noodles to pot.
Cook stirring for 5 minutes.
Ladle into bowls.
