Chicken Casserole

Ingredients
8 chicken thighs
Flour
Salt
Pepper
Butter
2 onions
1 capsicum
1 carrot
2 cups water
2 chicken cubes
1 tin pineapple pieces
1 can mushrooms in butter sauce.

Method
Cut chicken into bite size pieces.
Dip chicken in flour, salt and pepper.
Peel onions and carrots.
Cut into slices.
Trim capsicum and cut into rings.
Heat butter in an electric fry pan.
Fry chicken.
Add vegetables except pineapple and mushrooms, toss over heat for 3 minutes.
Add water, chicken cubes, pineapple with juice, mushrooms with sauce and salt and pepper to taste.
Stir well.
Cover and simmer for around 15 minutes.
