Chicken Cacciatore

Ingredients
6 chicken thighs
½ cup flour
2 tablespoons of chicken salt
1 onion
2 heaped tablespoons butter
2 teaspoons crushed garlic
2 tablespoons tomato paste
440g can peeled tomatoes
3 cups chicken stock
1 green capsicum
Olives to taste
2 cups rice

Method
Place chicken, flour and chicken salt into a freezer bag.
Peel onion.
Chop onion, tomatoes and capsicum.
Toss until chicken is coated.
Combine chicken, any flour remaining in the bag, onion, garlic, tomato paste, juice from tomatoes, and stock into a 3 litre casserole dish.
Cover and cook for 26 minutes on medium high in the microwave stirring 2 or 3 times during cooking.
Cook rice to packet instructions.
Add capsicum and tomatoes to the casserole dish.
Cover and cook for a further 12 minutes on medium high in the microwave.
Drain rice.
Place rice on a plate with the chicken on top.
Garnish with olives.
