Chicken and Vegetable Stir-Fry

Ingredients
2 cups rice
4 chicken fillets
½ cup soy sauce
3 teaspoons crushed garlic
1 head of broccoli
2 tablespoons oil
150g green beans
1 capsicum
1 zucchini
100g snow peas
400g can pineapple pieces
1 tablespoon cornflour
2 tablespoons water

Method
Cook rice to packet instructions.
Slice the chicken fillets and combine in a bowl with soy sauce and garlic.
Break broccoli in to florets and microwave until tender and drain.
Slice the capsicum and zucchini.
Trim the beans and break in half.
Heat oil in a large fry-pan.
Add the chicken and soy mixture and stir fry for 5 minutes.
Add beans, capsicum, and zucchini, stir-fry 2 minutes.
Stir in broccoli, snow peas, undrained pineapple, cornflour and water.
Stir until mixture boils and thickens slightly.
Serve stir-fry with rice.
