Chicken and Tomato Soup

Ingredients
1 onion
2 medium chicken thighs
1L chicken stock
400g canned tomatoes
1 tablespoon tomato puree
Salt
Pepper

Method
Chop the onions coarsely.
Chop the chicken thighs into strips.
Put the onion and chicken in a large pan with half the stock.
Cover and simmer for 5 minutes.
Add the tomatoes, tomato puree and remaining stock.
Bring to the boil and simmer for 20 minutes.
If canned whole tomatoes have been used, mash with a wooden spoon.
Season with salt and pepper.
