Chicken And Rice
Ingredients
1 onion
¼ cup chicken stock
2 teaspoons garlic
1 can chicken and corn soup
400g frozen mixed vegetables
4 chicken breasts
¼ cup buttermilk
1 teaspoon pepper
Juice of 1 lemon
1 teaspoon parsley
½ cup grated cheese.
Method
Preheat the oven to 180C.
Cook rice to packet instructions.
Peel and chop onion.
Cut chicken into bite size pieces.
Cook chicken in a little butter in a saucepan.
Sauté onion in stock with the chicken.
Add garlic.
Cook for 2 minutes.
Whisk in soup.
Add vegetables, and buttermilk.
Mix thoroughly.
Season with pepper, lemon, parsley and cheese.
Drain rice.
Place mixture in a casserole dish.
Top with rice.
Bake for 15 minutes.
