Chicken and Potato Marsala

Ingredients
2 onions
500g chicken fillet
4 tablespoons medium Marsala Curry Paste
400g chopped tomatoes
1 can mushrooms in butter sauce
2 cans new potatoes
200ml boiling water
2 tablespoons coriander
Salt
2 cups rice

Method
Cook rice to packet instructions.
Peel and slice onions.
Cube chicken.
Half the potatoes.
Dry-fry the onions and chicken in a non-stick pan for 5 minutes.
Stir in the curry paste and tomatoes.
Mix well, and add the mushrooms, potatoes and boiling water.
Cover and simmer for 10 minutes.
Stir in the coriander and season to taste.
Serve on a bed of rice.
