Asian Chicken Drumsticks

Ingredients
8 drumsticks
2 tablespoons barbecue sauce
juice of 1 lemon
1 tablespoon soy sauce
1 tablespoon honey
2 shallots
1 teaspoon grated ginger
1 teaspoon crushed garlic
2 cups rice

Method
Slice shallots.
Place drumsticks into a shallow casserole dish.
Combine BBQ Sauce, lemon juice, honey, soy sauce, shallots, ginger and garlic.
Pour over drumsticks and toss to coat.
Allow to marinate in the fridge for at least 30 minutes.
Bake with marinade in a moderate oven (180C) for 40 minutes.
Cook rice to packet instructions in the last 20 minutes.
