Apricot Noodle Chicken
Ingredients
1 tablespoon oil
1 onion
1 teaspoon crushed garlic
500g chicken thighs
60g packet chicken soup mix
1 tin apricot nectar
3/4 cup stock
1/2 cup chopped dried apricots
250g fresh Singapore noodles
150g snow peas
Method
Peel and slice onion.
Slice chicken into thin strips.
Prepare noodles to packet instruction.
Heat oil in a non stick fry pan.
Sauté onion and garlic until onion is tender.
Add chicken, browning well.
Stir in soup mix, nectar and stock.
Bring to the boil.
Simmer for 5 minutes.
Stir in apricots noodles and peas.
Toss over gentle heat for 3 minutes and serve in bowls.
